Vitamin A is an essential (vital) fat-soluble vitamin that humans cannot synthesize themselves, so they are dependent on its intake from food. This vitamin is found in animal products, especially in liver and butter, in smaller amounts in milk and cheese, and also in sea fish, such as halibut and mackerel. Plants do not contain vitamin A, but the carotenoids known as provitamin A, yellow to yellow-red pigments that are converted into retinol (vitamin A) in the human body. There are around 400 carotenoids, 50 of which have pro-vitamin A activity, with beta-carotene being the most active form for humans. Vitamin A has a number of effects. Among other things, it influences growth, the formation of skin, mucous membranes and cartilage tissue, the visual process, the development of the placenta as well as fetal development and the production of testosterone. It is also important for the immune system, especially for fighting off infections. Vitamin A plays an important role in the differentiation of cells and, with optimal supply, increases resistance to cancer-promoting factors. These can be increased, for example, by carcinogens and co-carcinogens such as the condensate in cigarette smoke, benzopyrene and various others.
